Materials

  • Salt
  • 1 Mini Seedless Watermelon 4 cups watermelon juice
  • Limes 8 oz lime juice
  • Jalapeño
  • 12 oz Tequila
  • 4 oz Cointreau

Instructions

Prep

  • Begin by washing and cutting the jalapeño. If you desire a milder spice level, consider removing the seeds. Combine the prepared jalapeño pieces with the tequila in a covered container or sealed bottle. Allow to infuse over a span of a few hours; keep in mind that the steeping duration will influence the intensity of the spice. Alternatively, if time is limited, feel free to bypass this step and proceed with muddling the jalapeño as instructed.
  • Dice the watermelon into cubes and transfer them to a blender. Once blended, strain the watermelon juice into a pitcher and store it in the refrigerator until it's time to enjoy. While the peak freshness of watermelon juice is when it's freshly made, you can still enjoy up to three days when tightly sealed and refrigerated.
  • Squeeze limes with citrus juicer reamer and store juice sealed in the refrigerator.

Garnish

  • Select your glasses of choice and rim with a lime wedge of agave syrup.
  • Mix Tajin seasoning and salt to a plate, and rim glassware.
  • Fill glasses with ice.
  • Cut lime wheel and fresh jalapeño for garnish.

Makes 2 Drinks

  • In a cocktail shaker, add 3 oz of jalapeño-infused tequila. If tequila is not infused, add a couple of slices of jalapeño to the shaker and muddle.
  • Add 1 oz of Cointreau and 2 oz of fresh lime juice.
  • Add ice and shake.
  • Add 1 cup of watermelon juice and stir.
  • Strain into Tajin-rimmed glasses on ice.
  • Add fresh jalapeño and lime wheel for garnish.
